I have decided to trade in my old car and take the money and buy myself the VERY BEST computer I can get my hands on. Yes, I was considering the fact about the number of bays and decided I would buy a small tray conversion kit from 5-1/4 to 3-1/2" The box has several 5-1/4" and I only need one, but thank you!
Firstly im assuming your overclocking your computer as all the parts you priced are aimed at that. If for some reason your not then just buy a pre built I7 920 system it will be pretty much the same as the parts you piced at stock settings.
There is only 1 good reason to buy an I7 975. That is if you are heavily into overclocking and want to reach some sort of record speed.
For normal people its exactly the same processor as the I7 920. You can even overclock the 920 to 4ghz easily. Which makes it much faster than the extreme edition.
The motherboard and ram you have picked are aimed at hardcore overclockers too. Unless you are aiming to get that extreme edition to 5ghz then get something much cheaper. You can still reliably get 4ghz out of an I7 920 on a motherboard half that price.
Get 6gb ram. No game will take your total ram usage over about 3gb and you wont be able to overclock anywhere near as well with 12gb holding you back.
The graphics card is fine. I would get a bigger monitor though. 24" wont come colse to using the full potential of that card you picked.
Get a solid state drive for your operating system. Slow hard drives will always bottleneck a system.
I would just get a air CPU cooler like a megahalems its more than good enough to keep an I7 at 4ghz cool. The water cooling is only really going to be an advantage when you get to really high overclocks.
(remember as you get to spending more than $2000 you can only expect about 5%ish increase in performance for every $1500 ish you spend extra. So it wuickly is not worth the money. I would spend $3000 now and in two years when your system is getting out of data buy another with the $3000 you have left.
Why?
The only reason I can see buying that computer is for benchmark breaking bragging rights. It’s massive overkill for anything short of video production work.

If you do want to go this route, you don’t want to miss the latest SATA 3 specs. Combine the latest ASUS motherboard with a pair of Intel X25 extreme Solid State Disks in RAID 0 for unbelieveable system boot times

If you’re getting a BluRay burner, make sure you add a BD reader to make it simple to copy ridiculous amounts of data.
One warning - that case has 4 3.5" bays, and you’ve already specified 5 hard drives.
The worst thing about buying a record setting PC for a record setting price is that in 3 years it will be mainstream level performance or below.
